CEREX has developed the High-Brix coating process to prevent shrinking while at the same time maintaining high versatility. This is a mix of High- and Low-Brix technology. In a special pre-dryer, we first reduce the moisture content of the cereal product to be coated, as is done in High-Brix coating. The syrup in the first step is applied as in the Low-Brix process. It is then boiled and sprayed onto the product under pressure. A large portion of the water contained in the syrup evaporates immediately after the spray nozzle. This reduces the drying requirement and prevents shrinking of the cereal product. Spraying of a low syrup content (low sugar content) is performed in the same way.
