The direct injection of steam
The patented Bichsel direct steam-injection system heats the product up in a controlled and consistent way, maintaining the required target temperature and/or pressure throughout each phase of the cooking process.
Steam injection and ventilation are controlled by the rotating position of the vessel.
Controlled cooking process
The cooking process is controlled by means of a programmable temperature or pressure curve. Only with CEREX cookers it is possible to use temperature as the main controlling parameter. This is considerably more consistent than one based on the control of pressure.
Automatic closure
Thanks to the new-developed, patent-pending TÜV-certified CEREX closure system, the market has now at disposal a closure system capable of meeting the tough day-to-day needs of the industry.
